The Symphonie Gastronomique (Photos 2000)
It’s first occurrence was in 1991, to celebrate the 10th anniversary of la Fondation Gérard-Delage. Based on the Salons dégustation des Laurentides, this concept required the participation of 20 hotels serving a gourmet dinner for 50 persons in order to accommodate 1,000 guests. These establishments requested that people be assigned directions in order to avoid that some stand be overburdened while others have no guests. Following this request, the organizing committee asked us to find a method by which each guest would be directed to a specific establishment. This seemed devoid of interest. We therefore decided to assign each person at a table to a different hotel in order to present to the people at the table a selection of the 20 different dishes offered. Then we decided that each guest would sample a different establishment for each of the 6 courses. We eventually realised that by doing this, we were creating a unique menu for each guest. In a room of 1,000 people, nobody would have the same menu.
Waiting time at each stand was minimal and meetings between guests numerous since at each course, guests would go in a different section of the hall.
The success of this event was such that the Symphonie Gastronomique was repeated 10 times : in 1995 for the Foundation’s 15th anniversary and in 2000 for it's 20th, in 1996, 1997,1998,1999,2000, 2001, 2002 for the Gala des Ambassadeurs of the Palais des Congrès de Montréal and in 1998 when 7 Quebec schools were responsible for the meals prepared. In 2000, 10 caterers were added. At each of these events, profits were given to the Fondation Gérard-Delage.

In 1998, in order to provide a bit of variety, the Fondation Gérard-Delage accepted to organize this new concept. Totally original, the object was more or less a Gastronomical Rally during which guests would take each course of a five course meal in a different restaurant amongst the best in Montreal..
To convey them to and fro, luxurious automobiles (Cadillac, Mercedes etc.) would take them to their destination in total comfort. They didn’t know where they were going but their chauffeurs did.
Upon arriving at their destinations, they were greeted by the owner, who then proceeded to dine with them.
In 2001, la Soirée des Patrons had a special meaning. Part of the profits were to be given to three youngster competing in the international Olympiades (technical and professionnal training) held in Seoul in september 2001. Julie Noël de Tilly, student at l'Institut de tourisme et d'hôtellerie du Québec, represented Canada in table service; Jonathan Ranger from the École hôtelière des Laurentides was candidate in cuisine and Justin Pelchat of the Centre intégré en alimentation et tourisme de Québec was in pastry. Grants of 5,000$ were given to each of them in order to train for this important competition where 42 countries were represented. Julie came in second (silver medal) and the other two came in fourth. Congratulations.
This soirée was done again in 2000, 2001, 2002, 2003, 2004, 2005, 2006, 2007. It will be repeated on may 13h 2008

A value of 100 000 $ in prestigious wines In collaboration with the Société des alcools du Québec, the Fondation Gérard-Delage organised this wine lottery. It is composed of 10 cellars with a total value of 100 000 $. Each wine cellar can hold 200 bottles selected by the following agencies:
Importation Épicurienne R.A. Fortin, LCC/Clos des Vignes, Le Marchand de Vin, Les Sélections François Fréchette, Maison Maxxium, Réserve et Sélection, Société commerciale Clément Internationale, Société commerciale Ville-Marie, Univins et Vins Philippe Dandurand.
Thanks to these partners, we will be able to fill the constantly growing requests for scholarships coming from young graduates and professionnals in the hotel, restaurant and tourism sectors. Thanks also to your continuing financial support, the bursers live rewarding experiences in those sectors which can only benefit our industry and those who are customers, yourselves.
We are proud of our bursers, particularly Yves Lowe, young chef at the Cube restaurant in Montreal, who received a 2 500 $ scholarship, which allowed him to compete in New-Zealand at the World Junior Chef Challenge 2002, last July. Monsieur Lowe came in second at this international competition. Other bursers are at the Université du vin of Suze-la-Rousse and at Macon-Davayé. Another burser has begun his Master of Wine, in january 2003. It is to help the excellence of our youngsters that we ask you to participate in this lottery since all proceeds will be exclusevely used for scholarships.
