It is to the memory of Gérard Delage that this Foundation has
been dedicated. Gérard Delage was Quebec’s hospitality ambassador, a leader
in the promotion of tourism and an advocate of gastronomy.
Called to the bar in 1935, Mr. Gérard Delage was
legal counsel and director of the Association
des hôteliers de la province de Québec. He came to play an important role among the
hoteliers of the world by becoming vice-president of the American Hotel Trade
Association Executives, official representative of the Hotel Association of
Canada, the Canadian Tourist Association, the International Hotel Association
and president of the Conseil
du tourisme de la province de Québec.
As he witnessed the dazzling evolution of the tourism industry over the
years and shared in most of the victories and benefits in the field, Gérard
Delage assumed his title of dean of the world of gastronomy with humour and
detachment, as well as with the utmost respect for the important part played by
the hundreds of professionals who have spared no effort to make Quebec the
paradise of fine dining. Incidentally, he used to say that gastronomy was the
first reflection of civilisation.
Deceased May 25, 1991 at the age of 78, Gérard Delage will forever
remain the “Prince of gastronomy in Quebec”, a title granted him by the Confrérie de la chaîne des rôtisseurs as successor to
Cumonski. |
